Only you can make yourself happy!

First off I want to say that I had an amazinggg time at Usher! I forgot the beauty of a good concert!! Erin and I had a good view (not close- but still good!!), we had $10/6 pack of beers (YES CHEAPPPP!! Not like at home- $10 CUP of beer at concerts), and we danced and busted out Usher songs- amazing!!! Hit up Hongdae on the way home- partied it up there for a bit, the rest is history.

I decided that I needed a little revamp of my place. I was sick of the windmills and frankly I'm going through this "I'm over it" phase- the novelty of Korea has worn off and I'm missing out on all the fun back home (cottages, parties, friends, family, pools, beaches, summer travels, etc.) I decided that I wanted to brush up my place a bit- add some more life to it. If I was going to be here 8 more months (which I will be) I wanted it to be MINE. I rolled up the old windmills (couldn't bare to part with them completely) and I bought some bamboo curtains. I hung them on my outer windows and I loved them so much I decided they would make for a nice/different look in the apartment too. They are also super handy to hang lots of pictures in- which I did with many memories of last summer from the cottage, stag & does, 4wheeling, golf tournament and lots of friends and family. It was nice to go through all my pictures that I brought here and pick out new ones I hadn't seen in awhile- I feel a lot better about things now!
So I'm becoming slightly obsessed with Korean food- I love it! I also want to be able to bring it back with me to Canada!! Unfortunately I feel there will just be some things I will not be able to find (bummer). I really particularly love kimchi soup- although I HATE kimchi (go figure). I crave it on a regular basis so I decided to make some. I looked up some recipes on the internet (after having a rough idea what to put in it anyway). I also discussed it with one of my classes and challenged them to ask their mother's to send in family recipes (trying to get some real Korean secrets from them....didn't work out so great). Either way, I had a couple solid recipes and a good idea of what I needed to do. One of my co-workers said she had some nice and raunchy kimchi (the older the better for the soup). If you're not familiar with kimchi, it's fermented cabbage in spicey sauces of sorts. It comes in many varieties and as much as I claim to hate it (part of it is KIND OF growing on me...A LITTLE). I decided last night to go for it and attempted what I thought was going to be the perfect recipe- AND IT WAS!!! I was super impressed- not sure it tastes 100% authentic, but it's delicious nonetheless. Packed with veggies, kimchi, tofu and tuna it was the perfect combination of spicey and garlic goodness all in one steamy pot! Lunch is now made for the week!! Delish!
